Eggplants with peel are cut into cubes of 10*10 mm or 20*20 mm in size; cubes have different geometric shapes; uneven edges are allowed. Presence of together frozen cubes and circles not exceeding 10% is allowed. The product is clean, healthy, not damaged by agricultural pests and diseases.
Colour of the peel is from light to dark purple and colour of the pulp is from cream to light grey; taste and smell are typical for eggplants after heat treatment in the stage of harvest maturity. Foreign flavours, odours and impurities are not allowed. Consistency in the thawed state is quite dense, close to the consistency of fresh eggplants, a slight softening of the product is allowed.
